Wacky Cake

So named because there's no eggs, butter or dairy but still a really moist and flavorful cake. Wacky, right? During WWII United States used ration tickets for each household and things like sugar, eggs and bread took a lot of tickets. Consequently, recipes like this one were needed to use little or no ration items. This is a great cake for us during these COVID-19 days, as anyone whose gone shopping for basic groceries can attest. This is also great for any vegan peeps out there, just dust with powdered sugar and a few seasonal berries.

Baking this week has taught me that the ladies who came before us were incredibly resourceful and smart; there was no option for "no cake or no bread". They were still expected to put a complete meal on the table everyday, including dessert.

Cheers to all those who went through the dark times and came out better for it. I hope we can follow suit....

Recipe

1 1/2 cups AP Flour
1 cup sugar
1/2 tsp salt
1 tsp baking soda
3 T. cocoa
1 T. Vinegar
1/2 cup vegetable oil
1 tsp vanilla
1 cup cold water

Preheat oven to 350°F. Stir dry ingredients together in a large bowl. Add vinegar, oil and water; add vanilla and stir until just blended. Pour into greased & floured pan(s) of choice. (I used 2 9" baking pans but the layers came out thinner than I usually like. This would be great in an 8X8 with frosting on top). Bake for about 30 minutes (decrease or add time depending on pan size). Cool in pan for 10 minutes before inverting on a cooling rack. Frost with your desired frosting (cream cheese frosting…yummy!) and enjoy!
