Chocolate Overload??
Is it possible to overdose from too much chocolate? I would argue no, that’s not a thing…however, I came pretty close with these CC cookies.
Inspired by a cookie from a famous bakery in NY, these beauts elevate the simple yet iconic chocolate chip cookie to the next level. With a pound of high-quality chocolate my blood (and frankly my wallet) slow-blinked at first. But I was intrigued with the use of cake flour and melted butter so I had to give it a try. This giant cookie - 6 ounces to be precise - came out with a dark and crisp exterior and a gooey, cake-like interior. The toasted pecans added another layer of irresistible crunch to this thick cookie.
I must say, in my lifetime I’ve made at least a dozen different CC cookies and this one is right there at the top! I will continue to experiment, tweaking here and there to find the PERFECT combination of ingredients but I will be sure to have some insulin on standby….
