Let’s start at the base; after all, every house needs a strong foundation. The tart shell is a pâté sucrée (a fancy French name for sweet pastry dough) made with almond meal. This sweet and nutty dough stands up to the tangy bite of the classic lemon filling. No food coloring needed here - just golden eggs yolks and plenty of fresh lemon zest and juice. Finally, the flair: soft pillowy clouds of meringue toasted just right, to bring out the marshmallow flavor.

In fact, I think we need another look at that meringue. Excuse me while I wipe off the drool….
