Pineapple Upside Down Cake

Upside down cakes have been around for hundreds of years with origins in Europe but it wasn't until Jim Dole opened his company in 1901 that pineapples became the "gold" standard in the UDC game.

It's easy to see why this dessert is a southern favorite - scrumptious brown sugar glaze, sweet golden pineapples, the ubiquitous southern pecan, all enveloping a light and yummy yellow cake, baked in a perfectly seasoned cast iron skillet........what's not to love?! I don't want to say how many slices I've had today...someone had to make sure it still tasted great, right?? Such a selfless job…
