Blueberry Upside Down Cake

Pineapple is what comes to mind for most of us when we think of upside down cakes but really we can use any fruit that suits us. When I saw these beautiful blueberries at the market I knew I had to make another upside down cake with them. You really don’t need much of an excuse when the cake base is just sooo good! I added mace to spice up the cake and to play off of the blueberries. A hit of lemon juice and zest and, voila!, this beaut is ready for her closeup!
